Eggs Benny

So, first off, let me just say that not every food post here is going to include waffles. But, here's a little flashback to this summer when my boyfriend Will and I made Eggs Benedict with waffles and Ham. As I have said before, I love eating. I mostly surround myself with people who like to cook, and Will is no exception - especially when it comes to breakfast. He kills it.




Anyway, this summer Will and I tried out a dairy-free (if you don't know me, I'm allergic to everything) hollandaise sauce using paprika, lemon juice, eggs and hot butter. The sauce thickened up really nicely due to the large amounts of vegan butter and my parent's old Cuisinart food processor. We made one waffle, split it in fourths, poached four eggs, fried up some ham slices and ate ourselves a tasty brunch. Note: a hefty food-coma nap came afterwards. 



The side of potatoes are a tasty hash that is Will's signature when it comes to brunch, consisting of potatoes, onions and whatever tasty things we have in the pantry. 


Just looking at these photos makes me really hungry and excited for all the future food Jordie and I are going to make and I'm going to eat! : )
