Shrimp Fajitas

Woo, it has been a while!

So, on this rainy Saturday let me share a spicy dinner Jordie made for me last week. Shrimp Fajitas with Guacamole!


Surprisingly, the hardest part of this recipe was making the guacamole - not pictured as both Jordie and my hands were covered in avocados. We caramelized yellow and red peppers and red onions and fried up the shrimp. 



The end result was delicious, garnished with a little cilantro. How can you say no to that?



I'm going to go eat some pho and curl up with some coffee and netflix - happy saturday!

Ingredients listed below, everything can be made to taste.
Guacamole: avocado, red onion, jalapeƱo, tomato, cilantro, lime, garlic, salt, cumin - mash it all up and mix together!
Fajitas: Corn tortillas, shrimp, red onion, bell peppers, olive oil, lime, garlic, cumin, salt, chili powder, cayenne pepper - grill your meat and veggies of choice in a frying pan with seasonings and throw onto a tortilla!
